Spinach and lentil burgers

A great homemade plant based burger!

  • 80g frozen peas, defrosted
  • 100g baby spinach
  • 2 spring onions, cleaned, root removed and sliced
  • 1 small carrot, peeled and grated
  • 100g cooked red lentils
  • 45g porridge oats
  • 3 tsps fresh parsley, chopped
  • 1 clove of garlic, peeled and chopped
  • Rapeseed Oil Spray
  • 1 pinch salt and freshly ground black pepper
  • Method

    1. With the exception of the rapeseed oil, place all of the ingredients into a blender and blitz until a course mixture.

    2. Divide the mixture into 3 equal portions and shape into a burger. Chill for 30 minutes.

    3. Preheat a frying pan and add a couple of sprays of the rapeseed oil and cook each burger for 4-5 minutes on each side, taking care when turning so they don't break.

    4. Serve with a simple salad or in a burger or spinach bun.


    Divide into 2 to make slight larger burgers.
