Dice the tomato and place in a mixing bowl with the cooked couscous.
Roughly chop the mint leaves and broccoli and add to the tomato couscous mix, stir to combine and season with a little black pepper. Transfer to a lunch box with the herby seitan or meat-free chicken slices and the apple for dessert.
Store in a fridge for up to 24 hours
