Minty vegetable couscous with herby seitan lunchbox

Ingredients

  • 1 tablespoon fresh mint leaves
  • 120g cooked and cooled couscous or 55g dry weight, cooked then cooled
  • 100g herby seitan or meat-free chicken slices
  • 80g cooked or raw broccoli
  • 1 medium sized tomato
  • freshly ground black pepper
  • 1 apple for dessert

Method

Dice the tomato and place in a mixing bowl with the cooked couscous.

Roughly chop the mint leaves and broccoli and add to the tomato couscous mix, stir to combine and season with a little black pepper.  Transfer to a lunch box with the herby seitan or meat-free chicken  slices and the apple for dessert.

Store in a fridge for up to 24 hours
