Falafel salad wrap

Quick, easy and bursting with flavour make this the perfect lunch!

  • 1 soft tortilla wrap
  • 1 small carrot, grated
  • 50g falafels, sliced
  • 0.25 tsps Dijon mustard
  • juice of 1 lime
  • 1 tsp vegan mayonnaise
  • 1 handful crisp lettuce, roughly chopped
  • 2cm piece of cucumber, diced
  • 2 radishes, sliced
  • freshly ground black pepper
  • Method

    Place the mayonnaise, lime juice and mustard into a small bowl and mix well to make a dressing. Season with a little black pepper.

    Add the grated carrot, sliced onion, sliced radishes, cucumber and lettuce to the dressing and stir gently until all the vegetable are coated.

    Place the mixed vegetables down the center of the wrap and top with the sliced falafel. Roll the wrap up securely and cut in half. Serve straight away or store in the fridge for up to 4 hours.
