Date, orange and cranberry energy balls

These no-bake festive energy balls make the perfect guilt-free indulgence

Ingredients

  • 12 medjool dates, pitted
  • 120g porridge oats
  • 1 large orange
  • 40g dried cranberries, roughly chopped
  • 30g ground almonds
  • 3 tsps ground flaxseed
  • Method

    Cut two strips of the orange rind with a vegetable peeler, and finely dice and place in a mixing bowl. Then squeeze the juice of the orange into a blender.

    Place the dates in to the blender with the orange juice and blitz until smooth, then transfer to the mixing bowl with the orange diced orange rind.

    Add the remaining ingredients to the mixing bowl and stir to combine, making a firm dough. If it's a bit sticky add a few more porridge oats or if it's a little dry add a tablespoon of water. Transfer the bowl to the fridge and leave for 30 minutes.

    Divide the mixture into 16 equal portions and place in an airtight container and store in the fridge. These will keep for 7-10 days or can be frozen for up to 2 months
