Chocolate chickpea cookies

This cookie recipe is perfect for so many reasons; firstly it only makes two so you cannot over indulge and secondly they are made with chickpeas to increase the protein and fibre content! Just 80 calories each and less than 5% fat!

Ingredients

  • 50g canned chickpeas, rinsed and drained
  • 15g porridge oats
  • 1 tsp cocoa powder
  • 1 tsp golden syrup

Method

Preheat the oven to 185, 375F, gas mark 5. Line a small baking sheet with grease proof paper

Place all of the ingredients into a small bowl and mash together with a fork until like stick bread crumbs (this will take 2-3 minutes to come together).  Add 1 tsp cold water to the mixture and stir to combine.

Divide the mixture equally into two portions, Shape each one into a ball and place on the baking sheet.  Using the fork, gently flatten to a circle keeping to about 5mm thick.  Bake in the oven for 10 minutes, then gently turn over and return to the oven for a further 3-4 minutes.  Remove from the oven and allow to cool.
