  • 900g blackberries
  • 150ml water
  • 1 lemon, juice
  • (allow 600g for every 600ml of juice) preserving sugar
  • Method

    Simmer the fruit in the water and lemon juice until soft. Strain through a jam bag or muslin and measure the liquid.

    Allow 600g sugar for every 600ml of juice. Combine together in a saucepan and heat to a continuous boil and cook until the temperature reaches 220F.

    Pour into jars and allow to cool before sealing.
