Beetroot hummus and avocado sandwich lunchbox

  • 2 tsps balsamic vinegar, optional
  • 1 tsp pinenuts or mixed seeds
  • 1 medium sized tomato and 4 cherry tomatoes
  • 1 handful mixed green leaves
  • 1 small avocado, peeled, stone removed and sliced
  • 30g beetroot hummus
  • 2 slices wholemeal bread (medium thickness)
  • Method

    Spread the beetroot hummus over the two slices of bread then sprinkle over the pinenuts or seeds add the sliced tomato and avocado. Bring both sides together to make a sandwich, cut in half and place into a lunch box.

    Cut the cherry tomatoes in half and mix with the green salad leaves and add to the lunch box. Just before eating pour the balsamic vinegar (if using) over the tomato and green salad.
